The cake we make was never about trends. It was about what our family actually wanted to eat.
Every year around Mother's Day, we get a small wave of customers who say some version of the same thing: "My mum loves chocolate, so I thought of you."
We always appreciate that. But it also makes us think about why chocolate feels right for this particular occasion, and whether most people could actually explain why they gravitate toward it.
We can. Because this bakery exists, in part, because of exactly that question.
Where the Cake Started
The cake at TCC wasn't designed for a market. It was designed for our family.
We love chocolate cake. But we don't love the version of chocolate cake that's more buttercream than chocolate, the kind where the frosting is the loudest thing on the plate, and the actual chocolate flavour gets buried underneath sweetness and fat.
What we wanted was something that tasted deeply of chocolate. Rich, a little fudgy, not light and not airy, but also not so sweet that you can only manage one bite. The kind of cake where the chocolate is the whole point, and everything else is in service of that.
So that's what we built. A chocolate fudge that's genuinely chocolatey. A sponge that's moist without being wet. Sweetness that's there but doesn't take over. No heavy buttercream.
It took a lot of baking to land on it. But when we did, it felt like the cake we'd always wanted to make.
Why This Works for Mother's Day
There's something fitting about giving someone a cake that was made because someone in a family actually wanted it, not because it was popular, or trendy, or photographed well.
Chocolate cake at its best isn't complicated. It doesn't need layers of decoration to justify itself. It just needs to taste like someone thought carefully about what they were making and why.
That's what we try to do with every order. And Mother's Day, more than most occasions, is when that kind of intention matters.

A Few Practical Notes
If you're ordering for Mother's Day, a few things worth knowing:
Order a few days ahead. Mother's Day is one of our busiest periods and delivery slots fill quickly. We'd recommend ordering by Wednesday for a weekend delivery.
We can add a handwritten message. Just leave a note at checkout and we'll include it with the cake.
Sizing: Our Crew size 6-inch cake serves about 5 to 6. If you're celebrating with a bigger group, get the Party size that serves around 10 to 12 people.
For even larger parties, our customers often pair a single cake with individual chocolate cupcakes for easy serving. Our cupcakes have the same sponge and fudge, just in a different form.
